Cauliflower (per head)

Description

Big, tight heads of cauliflower, cut fresh. If your family thinks they don’t like cauliflower, they’ve been having it steamed — roast it hot instead until the edges brown and it’s a different vegetable entirely. Our sheet-pan recipe with garlic and tomatoes is the one-pan way, and a cheese sauce never hurt anybody.

A head keeps about a week in the refrigerator. Four dollars a head, locally grown.
