Description
Our hens live on pasture at the farm on Lower Ravine Road, and these eggs are gathered the same morning we load the delivery truck — they don’t sit in a cooler for weeks the way store eggs do. Crack one next to a supermarket egg and you’ll see the difference: yolks that stand up tall and actually taste like something.
Fresh eggs keep for weeks in the refrigerator, so a couple dozen on the route is never a gamble. Scramble them, fry them in duck fat if you have our roast duck habit, or bake with them — they do it all.
