Description
Duck eggs are the ones bakers quietly hoard. The yolks are bigger and richer than a chicken egg’s, the whites are sturdier, and anything you bake with them — cakes, custards, quiche — comes out noticeably richer. Our ducks live on pasture here at the farm, and the eggs are gathered the morning of your delivery.
Start with our duck egg quiche or the maple duck-egg custard. One note we give everyone: duck eggs carry different proteins than chicken eggs — most people with a chicken-egg sensitivity do fine with them, but check with your doctor first.
