Description
Green beans that actually snap — picked young and tender, two dollars a pound. Blanch them three minutes and hit them with butter and salt, or go the church-supper route and simmer them low with bacon and onion until they give up entirely. Both are correct.
They hold about a week in the refrigerator, and they freeze beautifully if you blanch them first — a good candidate for buying heavy when they’re in.
