Description
Roma paste tomatoes — dense, low-moisture, few seeds. Romas exist for the pot: they cook down into thick sauce and paste in half the time a slicing tomato takes, which is why every serious sauce-maker asks for them by name. $1.50 a pound.
Also the right tomato for oven-drying and for salsa that isn’t watery. Counter, not fridge, and use them at full ripeness.
