Description

Glossy, firm eggplant by the pound. The trick with eggplant is confidence: cube it, salt it, and get it properly brown in a hot pan or oven — browned eggplant converts skeptics, steamed eggplant creates them.

Two of our favorite ways are on the blog: the sheet-pan roast with garlic and tomatoes, and folded into goat milk alfredo, where it turns silky and mild. Use it within a few days of delivery — eggplant likes to be eaten young.
